Peachy Dreams and Bubbly Wine
At Veritas, a truly great meal begins with a delicious bubbly. Our house bubbly, the Gruet Brut is a blend of 75% chardonnay grape with 25% pinot noir, giving an aroma of green apple and citrus. This classic house style Brut has a delightful finish to its crisp flavor, attributed to the craftsmanship of Gruet winery in New Mexico. The slight presence of the pinot noir grapes give this bubbly an iridescent quality, turning almost pinkish in the right light. Our house bubbly was chosen to pair with anything on the menu, but it goes especially well with the seasonal Fusilier Farms Peach Salad, made with fresh peaches, arugula, whipped ricotta, extra virgin olive oil, and cracked black pepper. These fresh peaches aren’t any ordinary fruit, either: we requested the farmers leave them on the tree to ripen, giving extra time to develop the sweet sugars naturally found in the fruits. The subtle bitterness of the arugula pairs beautifully with the sweetness of the peaches, all coming together into one cohesive, refreshing, and nuanced dish seated on a bed of whipped ricotta. The evoo and ground black pepper add an earthiness that gives it that savory lunch or pre-dinner taste. This pairing leaves one feeling refreshed, satisfied, and healthy.
